I'm partial to King and Koontz, so my list reflects that. Mild spoilers follow.
1. The Mist (from Skeleton Crew) - Something about being trapped somewhere while apocalyptic events unfold appeals to me (in fiction, that is). I always thought it read like a movie, so it was just a matter of time before it became one.
2. Watchers - An intelligent dog, a good-hearted loner and a damsel in distress being hunted by a deranged... something... made for a good read.
3. It - I've always considered King to be good at capturing the magical period when kids are approaching their teen years. When I was first reading this in high school, a teacher came up to me and deadpanned "What if it was them?" It takes over a thousand pages to deal with It, I shudder to think about how massive the tome would have been if there had been multiple such adversaries.
4. Phantoms - It has been a long time, but I remember this novel being very creepy.
5. The Stand - Another apocalyptic yarn, dealing with many characters and their struggles following a global epidemic.
